    Tropical Chocolate Chip Cookies
    from Elana Amsterdam’s Almond Flour Cookbook

    2.5 cups blanched almond flour
    0.5 teaspoon sea salt
    0.5 teaspoon baking soda
    0.5 cups coconut oil, melted over very low heat (which I don’t actually do, but it makes the dough easier to combine if you do it)
    0.5 cups agave nectar
    1 tablespoon vanilla extract
    0.5 cups coarsely chopped dark chocolate or chocolate chips
    0.5 cups cashews (unsalted), coarsely chopped
    0.5 cups unsweetened shredded coconut, toasted

    Oven at 350 degrees.
    Combine almond flour salt and baking soda in a large bowl
    Combine coconut oil, agave and vanilla in a medium bowl and then stir into the almond flour mixture.
    Fold in the chocolate, cashews and coconut.
    Spoon onto parchment paper lined cookie sheets, about 1 tablespoon per cookie.
    Press down dough to flatten.
    Bake for 7-10 minutes (my oven takes 10), until lightly golden.
    Cool on baking sheet for 20 minutes.

    As I prepare to leave the country for six months, I have been thinking a lot about what I’m leaving behind. Above all, I am going to miss this place, and all you people. My mornings in the box have come to be the best time of my day, and I have enjoyed becoming a part of this amazing community John, Mel and Rebekka have worked so hard to create.

    I will avoid the temptation to be overly verbose and sentimental, because this is not a “farewell,” but rather an “until later.” I will be back, and I’ll be in touch both here and on the paleo blog and Facebook in the meantime.

    To the coaches, thanks for all you have done for me over the last couple years. Being instructed and pushed by you has changed my life for the better. Your friendship is just as valuable, and I will miss it greatly.

    Set, please post your recipe for that delicious chili (and the rosemary muffins)!

      Please keep in mind that this isn’t from a recipe and that I just sort of wing things in the kitchen. So you may need to tweak some of the seasoning depending on how it tastes when you make it. But here goes nothing…

      (FYI I adjusted the measurements so that its for 4-5 servings rather than the 8-10 servings from the other night)

      Set’s Paleo Chili

      1 onion (I used sweet yellow onions)
      1 green bell pepper
      2 cloves of garlic
      1 clove of shallots
      2 big stalks of celery
      1 banana pepper
      1 poblano pepper
      1 jalapeno (didn’t put this in there but you can if you want your chili extra spicy)
      1 pound of ground beef (I used 85/15 grassfed so it wouldn’t be too fatty)
      1/2 pound of sirloin steak (you don’t have to put this in there but I think it gives the chili something special)
      1 and 1/2 can of stewed tomatoes with medium green chilies
      1 small can of tomato paste (some chili recipes call for flour or corn starch as a thickening agent, I find tomato paste to be an excellent substitute)
      2-3 tablespoons of chili powder (depending on how spicy you like it)
      1 tablespoon of cumin
      1 tablespoon of crushed chili flakes (can take out if you don’t want it too spicy)
      salt & pepper (can base the amounts on your preference)

      1. Chop up the onions, garlic, shallots, celeray and all the peppers, and sautee them with some EVOO until they sweat a little bit.
      2. Add the ground beef and the sirloin steak (chopped into 1 cm cubes). Add salt, pepper, and crushed chili flakes. Allow the meat to brown and basically cook. This will produce a lot of liquid so wait until some it boils off.
      3. Add the stewed tomatoes and the tomato paste. Mix everything really well.
      4. Add the chili powder, cumin, and some more salt/pepper (if necessary). Bring the chili to a low heat and let it simmer for 30 minutes to an hour, stirring occasionally. Adjust the chili and the other seasonings based on how spicy you like it.

      The last time I made this chili I realized it was missing that corn bread component so I looked for a good substitute. These paleo rosemary olive oil muffins turned out to be pretty great. I basically stole this recipe from the primal life site and adjusted it to take out the chocolate/honey to make it savory rather than sweet.

      Paleo Rosemary Olive Oil Muffins

      2 cups blanched almond flour
      2 teaspoons of baking soda (I realize its not 100% paleo but oh well…)
      1.5 teaspoons salt (I used coarse kosher salt)
      1/2 cup of olive oil (extra virgin of course)
      3 eggs
      1.5 tablespoons of fresh chopped rosemary

      Preheat oven to 300 degrees. If you are making muffins like I did, then either line the muffin tray with those cupcake paper thingies or grease them really well. Can also make it in a loaf pan, but again line it or grease it well. Mix the dry ingredients first. Make sure to get out all the clumps in the almond flour. Add the eggs and the olive oil. Mix everything really well (should be a pancake batter consistency). Fold in the fresh rosemary. Pour into your tray. Bake for 30 minutes (toothpick should come out clean). Let them sit for 20 minutes or so and then remove from the pan.

      Place 1 muffin at the bottom of a big bowl. Pour a heaping mound of chili on top. Enjoy being a cave man.
