Here is a great quote from Grant Achatz’s new memoir. For those who don’t know, he is probably the greatest (argue about the top 3 if you want) American chef who helms Alinea and the following is from his speech to the team on opening night
“Our goal here, together, is to make this the best restaurant in the country. I know what it means to work at a place like that (The French Laundry where he worked for 6 years). I want Alinea to be better than that. I demand Alinea be better than that. Anyone here who is not on that program should leave now. This is not a restaurant, or a paycheck, or just your job. This is our statement, our measure of what we can be”
That is the sentiment that led me to work at Le Bernardin in NYC(the busiest 3 Michelin star restaurant in the world), become a sous chef there, then have the Chef (Eric Ripert) ask me come to DC and run his kitchen here.
The point is this: Everyone has their own field, their own chosen arena. Regardless of yours, make your statement and never back down from the measure of what you can be, but realize it is the unending question. As we say in the kitchen “You’re only as good as your last plate”. And always be good to your team.

since they apparently don’t appreciate you just leaving the treadmill running in the hotel gym, lost time on the transitions to the runs b/c i had to re-start the treadmill every time… annoying
If you lived in that hotel instead of just visiting, they’d let you leave treadmills running all day long. Just sayin’.

My bike got stolen today. (Not outside the box, but outside my house.)
It is a black singlespeed that says “Pake” in white letters on the frame. Bullhorn handlebars, hot pink grip tape.
If you see someone riding it, please follow him/her home and take note of his/her address. Don’t e-mail me, tell me in person; I want there to be no record for the police to trace.
Damn, sorry. There is an Android app that runs regular searches on Craigslist and alerts you if those searches meet specified terms. It might be worth downloading the app and running it with search terms that would bring your bike up.
